breakfast casserole

a few weeks ago, while perusing trader joe’s website, i came across a recipe for breakfast casserole. the accompanying photo made my mouth water, and the instructions looked pretty simple.. it was at that moment that i decided i had to try my hand at making it myself.

the recipe calls specifically for trader joe’s spicy italian chicken sausages. i’m really happy that i held off and bought them during our recent trip across the line.. they’re all natural, made with chickens raised with no antibiotics, minimally processed and contain no artificial ingredients. they’re also really tasty, and i can’t wait to try out the rest of their line.

because i was cooking for 2 (and not 10, like the recipe indicates), i halved most of the ingredients. here’s what i did:

1/2 loaf crusty french bread, cubed into bite sized pieces
3 large eggs
1/8 cup milk
2 TJ’s spicy italian chicken sausage (pre-cooked)
1 cup tillamook monterey jack cheese, grated
1/8 teaspoon each; fresh ground black pepper, dried oregano, garlic powder
pinch chili powder

preheat oven to 350° and grease square baking dish with butter. place bread pieces in dish and distribute evenly. whisk the eggs, milk and spices and pour over the bread. add the remaining ingredients and bake for 25 minutes or until top is golden brown and a knife put in the center comes out clean. let sit for 5 minutes before serving (this is the most difficult part, because it smells so good that you’ll want to dig right in!).

the verdict? it was really good. the boyfriend has asked that we have it again, and ate 3 quarters of the dish himself. i’d say it was a success! i hope you enjoy it as much as we did.

bon appétit!
