a few weeks ago, while perusing trader joe’s website, i came across a recipe for breakfast casserole. the accompanying photo made my mouth water, and the instructions looked pretty simple.. it was at that moment that i decided i had to try my hand at making it myself.
the recipe calls specifically for trader joe’s spicy italian chicken sausages. i’m really happy that i held off and bought them during our recent trip across the line.. they’re all natural, made with chickens raised with no antibiotics, minimally processed and contain no artificial ingredients. they’re also really tasty, and i can’t wait to try out the rest of their line.
because i was cooking for 2 (and not 10, like the recipe indicates), i halved most of the ingredients. here’s what i did:
1/2 loaf crusty french bread, cubed into bite sized pieces
3 large eggs
1/8 cup milk
2 TJ’s spicy italian chicken sausage (pre-cooked)
1 cup tillamook monterey jack cheese, grated
1/8 teaspoon each; fresh ground black pepper, dried oregano, garlic powder
pinch chili powder
the verdict? it was really good. the boyfriend has asked that we have it again, and ate 3 quarters of the dish himself. i’d say it was a success! i hope you enjoy it as much as we did.
